Vegetable stir-fry

Serves 4

Tip: This is the ultimate clean-out-the-refrigerator meal. Try bean sprouts, water chestnuts, sugar snap peas or snow peas. Add leftover grilled chicken, sautéed shrimp or tofu.

  1. Add 1 teaspoon sesame oil.
  2. Add 1 medium onion.
  3. Add 1 green bell pepper.
  4. Add 1 red bell pepper.
  5. Add 2 teaspoons chopped fresh ginger.
  6. Saute 2 to 3 minutes.
  7. Add 8 ounces fresh mushrooms.
  8. Add 1 green onion.
  9. Add 2 teaspoons chopped fresh garlic.
  10. Cook until tender.
  11. Add 1 crown broccoli chopped into florets.
  12. Add 1 large carrot.
  13. Add 1 tablespoon mirin.
  14. Add 1 tablespoon reduced-sodium soy sauce.
  15. Add 2 tablespoons chopped cashews.
  16. Stir 1 minute.
