Vegetable stir-fry
Serves 4
Tip: This is the ultimate clean-out-the-refrigerator meal. Try bean sprouts, water chestnuts, sugar snap peas or snow peas. Add leftover grilled chicken, sautéed shrimp or tofu.
- Add 1 teaspoon sesame oil.
- Add 1 medium onion.
- Add 1 green bell pepper.
- Add 1 red bell pepper.
- Add 2 teaspoons chopped fresh ginger.
- Saute 2 to 3 minutes.
- Add 8 ounces fresh mushrooms.
- Add 1 green onion.
- Add 2 teaspoons chopped fresh garlic.
- Cook until tender.
- Add 1 crown broccoli chopped into florets.
- Add 1 large carrot.
- Add 1 tablespoon mirin.
- Add 1 tablespoon reduced-sodium soy sauce.
- Add 2 tablespoons chopped cashews.
- Stir 1 minute.
