Stuffed quinoa peppers

Serves 4

Tip: Stuffed peppers are often made with ground meat. This meatless version is just as satisfying, thanks to a hearty mix of quinoa, walnuts, tomatoes and zucchini.

  1. Add 1 tablespoon olive oil.
  2. Add 1 cup chopped zucchini.
  3. Add 6 Roma tomatoes.
  4. Add 1/2 cup chopped onion.
  5. Add 1 stalk celery.
  6. Add 2 tablespoons chopped walnuts.
  7. Add 3 garlic cloves.
  8. Add 2 teaspoons chopped fresh thyme.
  9. Cook until tender.
  10. Add 4 cups cooked quinoa.
  11. Add 1/2 teaspoon ground black pepper.
  12. Add 1 teaspoon salt.
  13. Add 1/2 teaspoon Parmesan cheese.
  14. Place 1/2 cup quinoa mixture into each pepper half.
  15. Cover with foil.
  16. Bake 15 to 20 minutes.
  17. Uncover and bake for 5 more minutes.
