Stuffed acorn squash
Serves 4
Tip: Try this technique with other squashes or grains. Butternut or buttercup squash and brown rice or couscous are great options.
- Place 2 medium acorn squashes on baking sheet.
- Roast 30 minutes at 425 F.
- Add 1 tablespoon olive oil.
- Add 1/2 cup chopped shallots.
- Add 1/2 cup finely chopped celery.
- Add 1/2 cup finely chopped carrots.
- Add 4 cloves garlic.
- Add 2 cups chopped apples.
- Saute until tender.
- Add 1 cup cooked quinoa.
- Add 1/4 cup chopped unsalted pecans.
- Add 2 tablespoons chopped fresh thyme.
- Add 1/2 teaspoon sea salt.
- Add 1/2 teaspoon ground black pepper.
- Mix until combined.
- Stuff 1/2 cup mixture into each squash.
- Bake 5 to 10 minutes 425 F.
