Steak with chimichurri sauce

Serves 4

Tip: Chimichurri is a vibrant, green sauce, originally from Argentina. It's great on grilled meats and seafood.

  1. Add 1/2 cup red wine vinegar.
  2. Add 1/2 cup olive oil.
  3. Add 2 shallots.
  4. Add 4 garlic cloves.
  5. Add 1/2 bunch cilantro leaves.
  6. Add 2 tablespoons parsley.
  7. Add 1 tablespoon fresh oregano.
  8. Add 1 teaspoon crushed red pepper flakes.
  9. Add 1/2 teaspoon sugar.
  10. Process until blended.
  11. Place marinade in a bowl.
  12. Add 1 pound skirt steak.
  13. Let marinate overnight in refrigerator.
  14. Set out at room temperature for at least 20 minutes.
  15. Grill for 2 to 4 minutes on one side.
  16. Allow grill marks to be made before turning or flipping.
  17. Cut into 2-inch thick pieces.
  18. Sprinkle 1/4 teaspoon kosher salt.
