Smoky frittata

Serves 6

Tip: If you can't find smoked Gouda, add 1/4 teaspoon of liquid smoke to regular Gouda cheese.

  1. Cut 1 small head cauliflower into medium florets.
  2. Simmer 5 minutes.
  3. Whisk 6 eggs.
  4. Add 1/4 cup light sour cream.
  5. Add 2 tablespoons Dijon mustard.
  6. Add 2 teaspoons paprika.
  7. Add 3 tablespoons finely chopped chives.
  8. Add 1/4 cup shredded smoked Gouda.
  9. Add 1/4 cup shredded cheddar cheese.
  10. Add 1/4 teaspoon salt.
  11. Add 1/4 teaspoon ground black pepper.
  12. Stir until blended.
  13. Add 1 teaspoon olive oil.
  14. Saute 5 minutes until golden brown.
  15. Pour egg mixture over.
  16. Cook on medium heat for 5 minutes.
  17. Add 1/4 cup shredded smoked Gouda cheese.
  18. Bake 10 to 12 minutes at 375 F.
