Smoky frittata
Serves 6
Tip: If you can't find smoked Gouda, add 1/4 teaspoon of liquid smoke to regular Gouda cheese.
- Cut 1 small head cauliflower into medium florets.
- Simmer 5 minutes.
- Whisk 6 eggs.
- Add 1/4 cup light sour cream.
- Add 2 tablespoons Dijon mustard.
- Add 2 teaspoons paprika.
- Add 3 tablespoons finely chopped chives.
- Add 1/4 cup shredded smoked Gouda.
- Add 1/4 cup shredded cheddar cheese.
- Add 1/4 teaspoon salt.
- Add 1/4 teaspoon ground black pepper.
- Stir until blended.
- Add 1 teaspoon olive oil.
- Saute 5 minutes until golden brown.
- Pour egg mixture over.
- Cook on medium heat for 5 minutes.
- Add 1/4 cup shredded smoked Gouda cheese.
- Bake 10 to 12 minutes at 375 F.
