Smoked Gouda vegetable risotto

Smoked Gouda vegetable risotto

Serves 8

Tip: Change this risotto with the seasons. In summer, try asparagus and zucchini. In fall, butternut squash and peppers.

  1. Add 1 teaspoon olive oil.
  2. Add 1 cup chopped onions.
  3. Add 1 cup chopped carrots.
  4. Add 1 tablespoon minced garlic.
  5. Saute until vegetables are soft.
  6. Add 2 cups cooked brown sushi rice.
  7. Cook for 2 to 3 minutes.
  8. Pour in 1/2 cup white wine stirring continuously.
  9. Pour in 1/2 cup low-sodium chicken stock when liquid is absorbed.
  10. Stir continuously.
  11. Continue adding another 1/2 cup wine and 1 1/2 cups stock in small increments.
  12. Add 3 cups crimini mushrooms.
  13. Add 3 cups cherry or sweet grape tomatoes.
  14. Add 1/2 cup shredded smoked Gouda cheese.
  15. Add 1 1/2 tablespoons chopped fresh thyme.
  16. Stir until cheese is incorporated.
  17. Add 1/4 cup half-and-half.
  18. Add 1/2 teaspoon salt.
  19. Add pinch black pepper.
