Shepherd's pie
Serves 6
Tip: Ground turkey breast and skim milk lighten up this classic Irish dish.
- Boil 2 russet potatoes for 20 minutes.
- Drain potatoes and return to pot.
- Add 1 cup skim milk.
- Add 1 tablespoon butter.
- Add 1/4 teaspoon kosher salt.
- Mash until smooth and set aside.
- Add 1 teaspoon olive oil.
- Add 1/2 cup chopped onions.
- Add 1/2 cup chopped carrots.
- Saute until tender.
- Add 1 pound lean ground beef.
- Add 1/2 pound turkey ground breast.
- Cook thoroughly.
- Add 1 tablespoon tomato paste.
- Add 1 teaspoon fresh rosemary.
- Add 1 teaspoon fresh thyme.
- Add 1/2 teaspoon kosher salt.
- Add 1/4 teaspoon black pepper.
- Add 2 cups chicken stock.
- Cook for 10 minutes.
- Stir in 1/2 cup thawed peas.
- Add 1/2 cup thawed corn.
- Cook until stock is absorbed.
- Bake for 20 minutes at 400 F.
