Roasted red pepper pesto

Serves 12

Tip: Traditional pesto is made with basil and pine nuts, but you can experiment with many variations. This one's a winner!

  1. Place 4 whole red bell peppers on direct heat.
  2. Turn peppers as outer skin blackens.
  3. Cover and steam 5 to 10 minutes.
  4. Peel cooled peppers.
  5. Add 4 roasted red bell peppers.
  6. Add 3 cups fresh basil leaves.
  7. Add 3 tablespoons pumpkin seeds.
  8. Add 3 tablespoons grated Parmesan cheese.
  9. Add 1 tablespoon olive oil.
  10. Add 1 teaspoon garlic.
  11. Add 1/2 teaspoon kosher salt.
