Roasted butternut squash fries

Serves 6

Tip: Try this technique with sweet potatoes or acorn squash. Cut "fries" in uniform size for even cooking.

  1. Cut 1 butternut squash into sticks.
  2. Add 1 tablespoon olive oil.
  3. Add 1 tablespoon fresh rosemary.
  4. Add 1 tablespoon fresh thyme.
  5. Add 1/2 teaspoon salt.
  6. Roast 10 minutes at 425 F.
  7. Shake to loosen squash.
  8. Roast another 5 to 10 minutes at 425 F.
