Pumpkin spice muffins
Serves 16
Tip: When baking, use Greek yogurt to reduce or replace shortening, oil or butter. This cuts fat and makes muffins extra moist and tender.
- Add 2 cups pumpkin puree.
- Add 2 cups nonfat plain Greek yogurt.
- Add 2 eggs.
- Add 1/4 cup canola oil.
- Add 1 teaspoon vanilla extract.
- Combine until well-mixed.
- Add 2 1/2 cups all-purpose flour.
- Add 1 1/2 cups sugar.
- Add 1 1/2 teaspoons cinnamon.
- Add 1 teaspoon ground cloves.
- Add 1 teaspoon baking soda.
- Slowly combine dry ingredients into wet ones.
- Mix 1 to 2 minutes.
- Scoop 1/4 cup batter into each muffin well.
- Bake 25 to 30 minutes at 350 F.
