Lentil ragout
Serves 6
Tip: You can use lentils of any color in this ragout. However, red lentils give the dish a beautiful color.
- Add 1 teaspoon olive oil.
- Add 1 cup onions.
- Saute for 3 minutes.
- Add 6 medium tomatoes.
- Saute for 3 minutes, stirring frequently.
- Add 5 cups water.
- Add 1 cup raw red lentils.
- Cook for 20 minutes until most of water is absorbed.
- Add 4 cloves garlic.
- Add 1 teaspoon kosher salt.
- Add 1/4 teaspoon ground black pepper.
- Stir in 1 tablespoon chopped fresh thyme.
