Fried rice with mushrooms

Serves 4

Tip: This fried rice is as flavorful as your favorite takeout version, but it's packed with brown rice and veggies.

  1. Add 1 teaspoon sesame oil.
  2. Add 1/2 cup diced onion.
  3. Add 1/2 cup diced carrot.
  4. Add 1/2 cup diced celery.
  5. Cook 2 minutes.
  6. Add 1 cup sliced mushrooms.
  7. Add 2 tablespoons sliced scallions.
  8. Add 1/2 teaspoon grated ginger root.
  9. Add 1 teaspoon chopped garlic.
  10. Stir 1 minute.
  11. Add 2 tablespoons low-sodium soy sauce.
  12. Add 1/4 cup peas.
  13. Add 1 cup egg substitute.
  14. Add 2 cups cooked brown rice.
  15. Heat thoroughly.
