Chicken cordon bleu
Serves 4
Tip: If you don't have spinach on hand, swap in broccoli, asparagus, green beans or sauteed kale.
- Add 1 cup panko bread crumbs.
- Add 1/2 teaspoon onion powder.
- Add 1/2 teaspoon garlic powder.
- Add 1 teaspoon chopped fresh parsley.
- Add 1/2 teaspoon kosher salt.
- Add 1/2 teaspoon paprika.
- Add 1/4 teaspoon ground black pepper.
- Add 1/2 cup egg substitute.
- Pound out 4-ounce chicken breasts to even thickness.
- Add 1/2 ounce Swiss cheese to each breast.
- Add 1/2 ounce Canadian bacon.
- Add 1/4 cup sauteed spinach.
- Coat with egg substitute
- Coat in bread crumb mixture.
- Bake 20 to 25 minutes at 400 F.
