Brown-sugared pork tenderloin stir-fry

Serves 4

Tip: Cut off any thick ends on the bok choy stems to ensure even cooking.

  1. Add 1/4 cup brown sugar.
  2. Add 2 tablespoons minced green onions.
  3. Add 1 tablespoon minced fresh ginger.
  4. Add 1 teaspoon minced garlic.
  5. Add 2 teaspoons cornstarch.
  6. Add 1/4 teaspoon salt.
  7. Stir together.
  8. Add 1 pound pork tenderloin, cut into strips.
  9. Refrigerate 2 hours.
  10. Add 2 teaspoons peanut oil.
  11. Cook about 7 minutes.
  12. Set aside until vegetables are ready.
  13. Add 2 teaspoons peanut oil.
  14. Add 6 cups baby bok choy.
  15. Add 1/2 cup sliced carrots.
  16. Saute 4 minutes.
