Brown-sugared pork tenderloin stir-fry
Serves 4
Tip: Cut off any thick ends on the bok choy stems to ensure even cooking.
- Add 1/4 cup brown sugar.
- Add 2 tablespoons minced green onions.
- Add 1 tablespoon minced fresh ginger.
- Add 1 teaspoon minced garlic.
- Add 2 teaspoons cornstarch.
- Add 1/4 teaspoon salt.
- Stir together.
- Add 1 pound pork tenderloin, cut into strips.
- Refrigerate 2 hours.
- Add 2 teaspoons peanut oil.
- Cook about 7 minutes.
- Set aside until vegetables are ready.
- Add 2 teaspoons peanut oil.
- Add 6 cups baby bok choy.
- Add 1/2 cup sliced carrots.
- Saute 4 minutes.
