Banana oatmeal pancakes

Serves 12

Tip: Replace 1/4 cup flour with ground flaxseeds or ground pumpkin seeds for a nuttier flavor.

  1. Add 1/2 cup old-fashioned rolled oats
  2. Add 1 cup boiling water
  3. Let sit 1 to 2 minutes
  4. Add 2 tablespoons canola oil
  5. Add 2 tablespoons brown sugar
  6. Set aside to cool
  7. Add 1/2 cup whole-wheat flour
  8. Add 1/2 cup all-purpose flour
  9. Add 1 1/2 teaspoons baking powder
  10. Add 1/4 teaspoon ground cinnamon
  11. Add 1/4 teaspoon salt
  12. Add 1/4 teaspoon baking soda
  13. Stir to blend
  14. Add 1/2 cup skim milk
  15. Add 1/4 cup fat-free plain yogurt
  16. Add 1 mashed banana
  17. Stir until well-blended
  18. Add 1 egg
  19. Add flour mixture to oat mixture
  20. Stir until moistened
  21. Spoon 1/4 cup pancake batter into pan
  22. Cook 2 minutes on each side
