Apple cinnamon muffins
Serves 16
Tip: You can buy whole oats and flaxseeds and mill them at home in a food processor.
- Add 2 eggs.
- Add 1 cup nonfat plain Greek yogurt.
- Add 2 tablespoons canola oil.
- Add 2 teaspoons vanilla extract.
- Add 1 cup all-purpose flour.
- Add 1 cup sugar.
- Add 3/4 cup milled oats.
- Add 1/4 cup flaxseed meal.
- Add 2 teaspoons cinnamon.
- Add 1 1/2 teaspoons baking powder.
- Add 1/2 teaspoon salt.
- Slowly add dry ingredients to wet ones.
- Mix on low speed until combined.
- Fold in 2 medium Granny Smith apples.
- Scoop 1/4 cup batter into each muffin well.
- Add 2 tablespoons sugar.
- Add 1/4 teaspoon cinnamon.
- Sprinkle over batter in each muffin well.
- Bake for 22 minutes at 350 F.
